How to make Pumpkin Oatmeal Chocolate Cookies

- 1 stick butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 cup pumpkin puree, about 1/2 a 15 oz can
- 1 teaspoon vanilla
- 1 cup flour
- 1 cup oatmeal
- 1/2 teaspoon baking soda
- 2 teaspoons pumpkin spice *see notes for substitution
- 1/2 teaspoon salt
- 3/4 cup chocolate chips, semi sweet or dark chocolate
1. Preheat the oven to 350.
2. Beat the butter in a mixing bowl until light and fluffly.
3. Add the white and brown sugar and continue to mix until well combined.
4. Mix the pumpkin puree and vanilla into the bowl and beat for 2 minutes.
5. Mix the flour, oatmeal, baking soda, pumpkin pie spice and salt together in a small bowl.
6. Add the flour mixture and mix until just combined. The batter will be wetter than standard chocolate chip cookie batter.
7. Stir in the chocolate chips.
