Ingredients
- 2 cups Romaine lettuce
- 1 cup arugula
- 1 cup baby spinach
- 1 avocado
- 1/2 English cucumber
- 1 cup cherry tomatoes
- 1 cup mango
- 1/2 cup red onion , chopped
CHICKEN MARINADE
- 4 chicken thighs , skinless and boneless
- 1 lime zest , from one lime
- 3 tbsp fresh lime juice , approx two limes
- 3 tbsp olive oil
- 4 cloves garlic , crushed
- 2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
HONEY LIME DRESSING
- 3 tablespoons olive oil
- 2 tbsp fresh lime juice , approx 1 lime
- 2 tsp honey
- 1/2 tsp salt
- 1/8th tsp cayenne pepper
Instructions
1. Mix together the grilled chicken marinade and pour over the chicken. Marinate for 1 hour.
2. Cook the chicken on a grill or in a cast iron grill pan with a little oil on a medium heat until it’s cooked all the way through.
