This simple salad is the perfect side to make all fall and is an easy dish to bring along to your Thanksgiving. We don’t believe in boring salads at Delish, and crunchy apples and tart cranberries bring a lot of life to this one. The slightly sweet and lemony dressing is easy to make, and you’ll want to have extra on hand to pour it over everything. Feel free to use your favorite apples for this. I like extra-crunchy, sweet, and tart ones, so I used a Granny Smith and Honeycrisp. You can also use goat cheese instead of feta or walnuts in place of the pecans. It’s easily customizable!

Total Time: 25-30 minutes (+ chilling time)
Servings: Makes 4-6 servings

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup dried cranberries
  • 2 apples, diced (use your favorite variety)
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup (optional)
  • Salt and pepper to taste

Directions:


  1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for 15-20 minutes or until the liquid is absorbed and the quinoa is cooked. Remove from heat and let it cool.
  2. In a large mixing bowl, combine the cooked and cooled quinoa, dried cranberries, diced apples, chopped pecans or walnuts, chopped parsley, and chopped red onion.
  3. In a small bowl, whisk together the lemon juice, olive oil, apple cider vinegar, honey or maple syrup (if using), salt, and pepper.
  4. Pour the dressing over the quinoa salad and toss gently to coat all the ingredients evenly.
  5. Taste and adjust seasoning if needed. You can add more lemon juice or honey/maple syrup according to your preference.
  6. Refrigerate the Cranberry Apple Quinoa Salad for at least 30 minutes before serving to allow the flavors to meld.
