  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground cardamom

For rolling the cookies

  • 1 teaspoon ground cardamom
  • 3 Tablespoon granulated sugar


1. In a medium bowl, beat the butter and sugar together until combined. Then add the eggs in one at a time and mix.1 cup unsalted butter,1 cup granulated sugar,2 eggs

2. Slowly pour in the flour, baking soda, cinnamon and 1/2 teaspoon of cardamom in the mixing bowl. Mix until the dry ingredients are just combined.1 cup whole wheat flour,1 cup all-purpose flour,1/2 teaspoon baking soda,1/2 teaspoon cinnamon,1/2 teaspoon ground cardamom

3. Chill the cookie dough in the refrigerator for 1-2 hours. Don’t skip this step!

4. When you are ready to bake the cookies preheat the oven to 325 degrees F.

5. Combine the remaining 1 tsp ground cardamom with the 3 Tbs of white sugar on a plate.1 teaspoon ground cardamom,3 Tablespoon granulated sugar.

6. Shape dough into balls about 1 inch in diameter. Roll the dough balls in the cardamom/sugar mixture. Space the balls about 2 inches apart because they will spread.

7. Place on baking sheets with parchment paper and bake for 12-15 minutes, until the edges are golden brown.

8. Cool on a wire rack.
